Cupping Coffee Is at the Center of Our Craft

Coffee is the seed of a tropical evergreen shrub. Growers around the world harvest and process a wide range of coffee varietals grown under widely different conditions. The genetics of the plant and the "origin terroir” greatly contribute to the character of the coffee you wind up tasting in the cup. At the Brooklyn Roasting Company we search out the world’s finest coffees and expertly roast them to tease out their many colorful characters. Our coffee team is constantly evaluating the coffees we source (or consider sourcing). At the outset, we measure the moisture content of incoming “green” and then sample roast these lots to determine the optimal profile for each coffee on a larger, commercial scale. We cup each sample roast on rotating stone tables equipped with circulating hot water baths, and a thick, tempered glass surface that floats on zany 1960’s superballs and hula hoops. This playful, colorful backdrop to cupping and assessing coffee–the core of our craft– is a constant reminder to appreciate and unlock the flavors and aromas that characterize the extraordinary beans we buy. Taken together with our “Color of Coffee” tasting approach, this crucial quality control step typifies our “serious but not snobby” approach.

i deliberately bought the can to keep my beans but the lid is so loose that it comes up with the slightest touch. what a waste

Store owner replied: Thank you for sharing your feedback, and we are so sorry for any disappointment regarding the tin's seal.Because we roast and package our coffee so fresh, the beans naturally release a lot of carbon dioxide during the "degassing" phase right after roasting. If we shipped our coffee in completely airtight tins, that expanding gas would build up pressure and cause the tins to warp or burst open during transit and storage. Our tins are intentionally designed to allow that initial gas to escape safely while keeping your beans secure. Once that initial degassing settles, long-term storage is all about keeping oxygen out. For an airtight solution, we usually recommend transferring your beans to a dedicated vacuum-seal canister (like a Fellow Atmos Vacuum Canister).We really appreciate your feedback on our packaging, and we will take your experience into consideration for our description of the tins. It’s my favorite first thing in the morning cuppa. I first thought it a bit extravagant to have coffee delivered but it’s far superior to anything I can find in local stores.

My favorite coffee bean I’ve found. I had it at a brunch place and had to ask where they go their beans. I use it for pour over and espresso and it’s great for both!

I really enjoyed the mocha java, if you add the right amount of sugar and cream it really does have a hint of yoohoo. I thought that was pretty cool, but yeah great tasting coffee most of the coffee's from brooklyn are just amazing and you can't go wrong.

Coffee is amazing. I put my fiancée on the brand and she loves it. I have to bring some all the way to California from new york every time i go visit. The way it brews, the flavor profiles it has . I pair it with my cigars of choice. Very rich, flavorful , and delicious. I drink it straight black hot or iced. I even tried the java mocha the purple bag. Its good but the mocha java is our favorite.
